When we came home from our recent travels out west, we were most eager to be reunited with our beloved cats. Inspired by the pure joy of that moment, we roasted a Colombian coffee with summery notes of cane sugar, peach, and a hint of lime. Named after the Japanese word, Junsui (純粋), the result is the perfect coffee to get ready for long days of sunshine and laughter.
This offering comes from the town of Santa Maria, in the department of Huila. Home to the Nevado del Huila volcano, it is now responsible for almost a fifth of Colombia’s total coffee production.
