Happy new year! Named after the Korean word for wisdom (지혜), this month's curated offering comes from Hermès Eduardo Chasoy's Finca Pinglio. Hermès’s production process is meticulous—he begins by leaving the coffee in its pulp for two days, then de-pulps and lets it rest overnight before moving to dry the following day. This method has allowed him to maintain the superb quality of his product, while still ensuring an efficient and repeatable process.
